Chocolate-almond delicious, our Organic Mexican coffee is grown and harvested in the southwest corner of Chiapas, on the border of Guatemala. Coffee plants thrive in the region’s rich volcanic soil and plentiful rainfall. To ensure the very best quality harvest, Chiapas farmers hand-pick their coffee then dry-mill and sort it for export.
The state of Chiapas produces a whopping 60% of Mexico's coffee (it also produces lots of cacao, which leads to chocolate, which makes us happy). Its rainforests are home to scores of animals and plants, many of which exist nowhere else in the world. (Is your own state home to the azure-rumped tanager? We thought not.) Ancient Mayan architecture abounds, as do incredible natural treasures like the Parque Nacional Cañón del Sumidero. This is also where, in the 1500s, indigenous Chiapanecan warriors chose to throw themselves from the canyon's cliffs rather than submit to foreign rule.
We think you'll be immediately overthrown by the Chiapas' slightly sweet, dessert-y quality, but please — don't jump. Just enjoy.
